Vegan [garlic free] pesto pasta

This recipe has a very flexible ingredient list and will taste delicious whether you decide to eat it warm or as a cold salad!

Ingredients //
Pasta - I used @sanremopasta chickpea pulse pasta
Spinach or rocket - as much as you like
Basil or mint - as much as you like
1/3 cup of pine nuts (toasted or not toasted) 1/3 cup of extra virgin olive oil - I use @cobramestate
1/3 cup of nutritional yeast or parmesan cheese
Salt & pepper
Chopped tomatoes and fresh spinach
Method //
1. Cook your pasta as per packet instructions.
2. While the pasta is cooking, add spinach/rocket, basil/mint, pine nuts, olive oil, nutritional yeast and salt and pepper to a food processor or blender.
3. Blend (I like to leave my pesto a little chunky)
4. Once pasta is cooked, stir through pesto sauce, tomatoes and spinach
